Healthy Oatmeal Chocolate Chip Cookies


Gluten-Free Oatmeal Cookies with Chocolate Chips & Sea Salt



I threw these together with what I had on hand and they turned out really good — soft in the middle, lightly sweet, and really easy to make.



I made a few swaps (used baking powder instead of soda, added a splash of almond milk when the dough felt dry, and tossed in some ground flax for a bit of extra fibre).



Here’s the recipe in case you want to make them too!



Ingredients:


• 1 ½ cups oats


• ¾ cup gluten-free flour


• ½ tsp baking powder


• ½ tsp cinnamon


• ½ tsp Himalayan pink salt


• ⅓ cup melted coconut oil


• 3 tbsp maple syrup


• 3 tbsp coconut sugar


• 1 egg


• A splash or two of almond milk (if needed)


• ¼ cup chocolate chips


• Pinch sea salt


• 1 tbsp ground flax (optional)



How to make them:


1. Preheat oven to 350°F and line a baking sheet.


2. Mix dry ingredients in one bowl, wet in another.


3. Combine the two and stir in chocolate chips.


4. If the dough feels dry, add a splash of almond milk.


5. Scoop into balls, flatten slightly, and bake for 10–12 minutes.


6. Let cool a few minutes before moving to a rack.


7. Sprinkle some sea salt on top!



Not overly sweet, easy to digest, and super cozy with a cup of tea.
